Easy Twice Baked Spaghetti Squash

Easy Twice Baked Spaghetti Squash

This is an easy healthy dish your family will love!

Ingredients:

  • 1 Spaghetti Squash (medium size)
  • 1 1/2 cups shredded Rotissere chicken (preferably organic)
  • 1 1/2 cups of Marinara sauce ( I use Rao’s Homemade: https://thrivemarket.com/p/raos-marinara-sauce for simple ingredients and low sugar)
  • 1/2  cup of shredded Mozzarella cheese
  • 1/2 cup shredded Parmesan cheese
  • 1/2 chopped onion
  • 1 tsp + 1 tsp olive oil divided
  • 2 cloves garlic minced
  • 2 cups spinach torn into small pieces
  • 1 tbsp of Italian seasoning
  • salt and pepper to taste
  • optional: fresh basil & oregano

Directions:

1. Preheat the oven to 400 degrees.

2. Cut the spaghetti squash lengthwise and scrap out the seeds. Rub the squash with 1 tsp of olive oil on inside and outside then place on baking dish cut side down. Bake for 25-30 minutes.

3. In skillet add the other tsp of olive, saute the chopped onions and garlic for approximately 3 minutes then add spinach. Cook til wilted, then add chicken and mix together. Take off heat.

4. Once squash is done, pull it out of oven and let it cool for few minutes. Once you are able to handle it, scrap the inside of the squash with a fork and place noodles into a large mixing bowl. Reserve the shells.

5. Mix the pasta sauce, onions, garlic, spinach, cheese, spices and chicken into the squash noodles. You can add more pasta sauce here if needed. Once it is all mixed together spoon the mixture back into the shells and top them with Parmesan cheese.

6. Bake for approximately 10 -12 minutes or when cheese has melted and bubbles.  Serve immediately.

Notes:

You can adjust the amounts of sauce, cheese, & chicken based on your liking. You may want to start with only have the squash noodles and add more accordingly. Bigger squash will give you a lot of noodles. You can always save the extra noodles and use them for lunch the next day in a stir fry with other vegetables!
